Our mission has always been to bring pure nature to your table — through honest, simple ingredients, grown in our own soil, rooted in the land we call home.

Over the past months, this mission has taken tangible form. On our farmland in San Candido, nestled in the heart of the Dolomites, we’ve begun the first planting phase of what we hope will become a long-lasting source of local, high-quality produce for our kitchen. From crisp lettuces to earthy carrots, delicate leeks to hearty turnips, we’re testing a wide variety of ground vegetables and a handful of berry cultivars. The goal is to understand which varieties flourish best in our unique high-altitude conditions — and, more importantly, which ones taste truly exceptional when grown in Dolomite soil.
Among these, one plant has earned our special attention: the potato (Solanum tuberosum) —
a humble tuber, but a true force of nature.
The Puster Valley has long been known for its potatoes. The secret lies in the soil: rich in minerals, with excellent drainage and cool nights that support slow, concentrated growth. Here, the potato doesn’t just grow — it thrives. Nutrient-dense, remarkably versatile, and naturally resistant, the Pustertal potato is a quiet powerhouse in our local culinary heritage.
Here, at Alpenblick, we’ve begun experimenting with several local and traditional potato varieties, to see how they respond to our soil and cultivation style. We’re not only interested in yield, but in texture, flavour, and how they perform when brought into Chef Filippo’s kitchen. So far, the results are promising — and delicious.
Our potatoes are sourced from nearby farms, where traditional farming practices are still alive and well. As our own crops develop, we hope to integrate even more of our homegrown potatoes into the menu.
This is just the beginning. Our cultivation project is about more than growing vegetables — it's about growing a story, a connection, a way of life. With each season, each harvest, we learn a little more about what this land can offer — and we can’t wait to bring that richness to your table.
